Abstract: Este trabalho tem como objeto o processo de valorização das tascas e tabernas de Lisboa e dos botequins do Rio de Janeiro, entre os séculos XIX e XXI. Antes reservados à plebe, eram ambientes rejeitados pelas elites, que os tinham como lugares indignos de serem frequentados, considerados verdadeiros "templos da vadiagem", e estavam sob constante vigilância policial. Por meio da análise de publicações da imprensa periódica das duas cidades, assim como de livros temáticos sobre essas casas de restauração, como guias turísticos e livros de receitas, buscamos demonstrar a mudança de discurso em relação a esses espaços de comensalidade popular. Uma vez que estes estabelecimentos se encontram atualmente em pleno processo de extinção, os movimentos de valorização são abordados neste estudo enquanto fenômeno nostálgico, qual seja, a tentativa de recuperação de uma memória definidora das identidades dos moradores de Rio e Lisboa. Tais fenômenos se desenrolam nas duas cidades, ao longo do século XX, e encontram seu auge entre finais do século passado e os dias de hoje, em que tabernas, tascas e botequins são reconhecidos como locais importantes para a cultura urbana local, seja pelo poder público, seja pelo seu entorno social. A análise feita permitiu demonstrar que o reconhecimento do valor cultural das casas tradicionais leva ao surgimento de novos bares e restaurantes destinados às classes média e alta cuja decoração e gastronomia são explicitamente inspiradas nos estabelecimentos antigos e populares.
The object of this work is the process of valuing the taverns and the "tascas" (traditional Portuguese popular restaurants) in Lisbon and the “botequins” (traditional Brazilian taverns) in Rio de Janeiro, between the 19th and 21st centuries. Previously reserved for the plebs, they were rejected by the elites, who saw them as unworthy places to be frequented, and were under constant surveillance by the State. Through the analysis of publications in the periodical press of the two cities, as well as thematic books about these restaurants, such as tourist guides and cookbooks, we seek to demonstrate the change in thinking (and discourses) in relation to these spaces of popular dining. Since these taverns are currently in the process of extinction, the appreciation movements are addressed in this study as a nostalgic phenomenon, that is, the attempt to recover a memory that defines the identities of the residents of Rio and Lisbon. Such phenomena unfold in both cities throughout the 20th century, and reach their peak between the end of the last century and the present day, in which taverns, “tascas” and “botequins” are recognized as important places for local urban culture, whether by power public or by society. As demonstrated in this investigation, the recognition of the cultural value of traditional houses leads to the emergence of new bars and restaurants aimed at the middle and upper classes, whose decoration and cuisine are explicitly inspired by old and popular establishments.
