Dinâmicas Associativas e Identidade Gastronómica do Concelho de Cantanhede

Abstract

Pretende-se com este Trabalho fazer um levantamento exaustivo sobre o movimento associativo do Concelho de Cantanhede e compreender a sua atuação nas diferentes áreas em que se inscrevem, tendo especial atenção às coletividades que promovem e dinamizam os inúmeros certames gastronómicos. Pretende-se também perceber, em termos identitários, a origem destes distintos paladares, onde a carne e sobretudo o peixe assumiram um papel preponderante, numa região geograficamente marcada pela terra e pelo mar. Para além disso, o foco principal do presente trabalho é mostrar a surpreendente variedade de Mostras Gastronómicas (cerca de vinte e sete) que se realizam por todo o território do Concelho de Cantanhede. As ditas mostras atuam como definição da Identidade Gastronómica das gentes do Concelho, na medida em que expõem as iguarias que espelham o que de melhor existe a nível gastronómico no referido Município, no que diz respeito ao modo como são confecionadas tradicional ou mais modernamente ou pelo tipo e variedade de ingredientes, dando preferência a produtos endógenos. Para que este papel seja cumprido na sua globalidade, é necessário o apoio e dinamização da parte de variadíssimas associações (sejam elas de cariz recreativo, cultural ou desportivo), que juntamente com o auxílio das Juntas, Uniões de Freguesias e mesmo Município, conferem ao Concelho de Cantanhede uma variedade gastronómica inigualável. Turisticamente, toda esta conjuntura traz inúmeros benefícios à região bairradina/gandaresa, no sentido em que atrai massas dinamizadoras e empreendedoras ao Concelho.

This essay intends to exhaustively analyse the recreative activities and movements in the Cantanhede county and therefore understand its effect on the various areas in which these activities are found, having in mind the colectivities which promote and dynamize the many gastronomic fests. On the other hand, this essay has the objective of making clear (in identitary terms) the origins of these distinctive gustations, in which both meat and fish have become preponderant in this region, geografically marked by both land and sea. Besides, the main focus of this essay is showing the surprising variety of Gastronimical Shows (about twenty-seven) which are performed through all the Cantanhede County’s territory. These Shows act like a definition of the Gastronomical Identity of the County’s people, as they show off the main dishes that display what is the best in a gastromical point of view in this County, whether it is about the way they’re cooked (in a more tradicional or modernized way) or the type and variety of ingredientes, mainly local. For this part to be achieved as a whole, it is necessary some support and dinamization from some associations (recreative, cultural or sportive ones), who count on the Parish Boards and even the own County to support these iniciatives, which gives the Cantanhede County na unequalled gastronomical variety. In terms of Tourism, all of this environment brings many benefits to this region, in the sense that attracts people who dinamyze and empreend the whole County.
