Title: | Análise do Desempenho Energético de Cozinhas Industriais | Authors: | Sousa, Alexandra Filipa Parente | Orientador: | Raimundo, António Manuel Mendes Gaspar, Adélio Manuel Rodrigues |
Keywords: | Eficiência energética -- cantina escolar | Issue Date: | Sep-2011 | Citation: | SOUSA, Alexandra Filipa Parente.- Análise do desempenho energético de cozinhas industriais [em linha]. Disponível em URL: http://hdl.handle.net/10316/20118. Coimbra : [s.n.], 2011.
encargos globais do edifício, o gás natural 23% e a água 13%.
The present dissertation summarizes the procedures used to characterize the energy consumption of an existing universitaire canteen. An energy audit of the building was done, and an assessment and a critical analysis were carried out about the use of energy. Several opportunities energy reduction are identified and discussed. An energetic simulation of the building was performed, using the HAP program in order to estimate the consumption of energy by the air conditioning equipments. The Solterm program was also used to evaluate the production of energy by the thermal solar system installed in the building. The results show that the installed solar system has a contribution (solar fraction) of only of 26%. After analyzing the results obtained with the various approaches, it was concluded that the higher consumer of electrical energy is the sector of the kitchen equipments, being responsible for 42,5% of the total consumption of the building. It was also verified that 65% of the natural gas was consumed by direct burning for the preparation of domestic hot water (DHW) and ambient heating. The remaining 35% are used by the kitchen and others appliances. For each meal served, it was determined that 1,28 kWh of electrical energy, 1,67 kWh of natural gas and 19 litres of water were consumed, resulting in a total cost of 0,39 €. The responsibilities with electricity correspond approximately to 63% of the total responsibilities of the building, 23% to natural gas and 13% to water. In order to make the building more efficient, some measures of energy reduction are listed, such as: the implementation of a energy system management, the implementation of training courses about the rational usage of energy, installation of power capacitors, increase of the collector areas of the existent solar system, use of more efficient lighting solutions. Keywords Energy characterisation, energy efficiency, energy audit, energy simulation of buildings. |
