Abstract: Esta dissertação de mestrado tem como tema central os doces coloniais, produzidos a partir dacombinação entre diversos tipos de frutas ou hortaliças e adição de açúcar. Nela analisamosessa tradição doceira que há muito tempo vem sendo desenvolvida pelos colonos de origemfrancesa, alemã, italiana, pomerana e portuguesa nas diversas colônias que constituíam ocenário da zona rural da Serra dos Tapes, composta atualmente pelos municípios de Pelotas,Canguçu, São Lourenço do Sul, Turuçu, Arroio do Padre, Morro Redondo e Capão do Leão,municípios situados no estado do Rio Grande do Sul, no extremo sul do Brasil. O objetivoprincipal desta pesquisa é analisar a produção de doces coloniais em Pelotas-RS e municípiosvizinhos, identificando suas origens étnicas e as relações sociais envolvidas nos processos detransmissão do saber fazer. Esta é uma investigação de caráter qualitativo, onde foramrealizadas quatro entrevistas semi-estruturadas com atores diretamente ligados à produção dosdoces coloniais. Foram identificadas grandes dificuldades no que diz respeito à adaptação àsaltas exigências da vigilância sanitária por parte dos produtores rurais. No entanto, o contextodas vendas é positivo no que diz respeito à geração de renda para as famílias produtoras. Nãoobstante, se verificou a influência cultural de pelo menos cinco etnias diferentes para esse saberfazer doceiro, sendo elas, alemãs, pomeranas, francesas, italianas e portuguesas. Pelotas-RS éreconhecida internacionalmente como a capital brasileira do doce, devido à forte tradição navertente doceira, destacadamente por seus doces finos, relegando assim a histórica dos docescoloniais ao segundo plano. Buscou-se com esse trabalho dar visibilidade a este outro saberfazer, o dos doces de fruta conservados em açúcar.
This master's thesis has as its central theme colonial sweets, produced from thecombination of different types of fruits or vegetables and the addition of sugar. In it we analyzethis sweet tradition that has been developed for a long time by the French, German, Italian,Pomeranian and Portuguese colonists in the various colonies that constituted the scenery of therural area of Pelotas-RS, a municipality located in the extreme south of Brazil. The mainobjective of this research is to analyze the production of colonial sweets in Pelotas-RS,identifying their ethnic origins and the social relationships involved in the processes oftransmitting know-how. This is a qualitative investigation, in which four semi-structuredinterviews were conducted with actors directly linked to the production of colonial sweets.Major difficulties have been identified with regard to adapting to the high demands of healthsurveillance by rural producers. However, the sales context is positive with regard to incomegeneration for producing families. Nevertheless, there was a cultural influence of at least fivedifferent ethnicities for this know-how to make sweets, being them, German, Pomeranian,French, Italian and Portuguese. Pelotas-RS is internationally recognized as the Brazilian capitalof sweets, due to its strong tradition in the confectionery area, especially for its fine sweets,thus relegating the history of colonial sweets to the background. This work sought to give lightto this other know-how, that of fruit preserves preserved in sugar.
