Abstract: The increasing concern about food waste, has became an ethical, environmental, economic and political problem. It is estimated that about one-third of the worldwide produced food is wasted or lost. The consumption of meat in Portugal has been steadily increased over the years (in 2019 there was a consumption of 119.1 kg/inhabitant). In this way, the high waste associated with this consumption, makes it necessary to develop sustainable approaches for the reuse of this waste as industrial raw material and its conversion into value-added materials. Therefore, Sonae and EcoXperience, in partnership with the Colling Group of the University of Coimbra, have explored alternatives for the reuse and valorization of animal fat to produce ecofriendly detergents, from products of biological origin.The main goal of this work was the valorization and reuse of animal fats, as raw material for their transformation into cleaning products, in this case a liquid hand soap. The work is consisted by a computational and an experimental component. The developed strategy uses a recycling process with two stages: i) the hydrolysis of animal fat catalyzed by enzymes and, ii) the neutralization/saponification of fatty acids with a base.Among the constituents of animal fat are the triglycerides and the phospholipids, so lipases and phospholipases were used in the hydrolysis reaction. The detailed characterization of the interaction of different enzymes with fats was obtained by molecular dynamics simulations (MD). The results obtained indicate a more effective interaction of the enzymes with the fat/water interface at 60 ºC. This is correlated to the tendency towards the liquid state of the fat, at higher temperatures. Experimentally, the lipase was obtained by a commercial solution (Lipex), while the swine pancreas phospholipase was isolated in the laboratory. However, after determining enzyme activity, it was concluded that the isolated enzyme was significantly less active compared to the Lipex formulation. The hydrolysis reaction was optimized, considering some variables: fat/water ratio, Lipex percentage, temperature and pH. After optimization of the hydrolysis reaction, four liquid soaps were prepared. Finally, the detergents obtained were characterized by pH measurement, foam test, emulsification test and viscosity. These detergents have the potential to, after optimization of their formulations, become an alternative for the valorization of residues from food waste.
A preocupação com o desperdício alimentar tem vindo a aumentar, ao longo do tempo tornando-se um problema ético, ambiental, económico e político. A nível mundial, cerca de um terço dos alimentos produzidos são desperdiçados ou perdidos. O consumo de carne em Portugal tem aumentado continuamente ao longo dos anos (em 2019 observou-se um consumo de 119.1 kg/habitante). Desta forma, o elevado desperdício associado a este consumo, faz com que seja necessário desenvolver alternativas que possibilitem valorizar e reaproveitar estes desperdícios como matéria-prima industrial. Neste sentido, a Sonae e a EcoXperience, em parceria com o Grupo Colling da Universidade de Coimbra, tem explorado alternativas para o reaproveitamento e valorização da gordura animal para a produção de detergentes ecológicos, a partir de produtos de origem biológica.Este trabalho tem como objetivo principal a valorização e reutilização de gorduras animais, como matéria-prima para a transformação em produtos de limpeza, neste caso um detergente líquido para as mãos. O trabalho é constituído por uma componente computacional e outra experimental. A estratégia desenvolvida utiliza um processo de reciclagem com duas etapas: i) a hidrólise da gordura animal catalisada por enzimas, ii) a neutralização/saponificação dos ácidos gordos por adição de uma base.Para além dos triglicerídeos, um dos constituintes da gordura animal são os fosfolípidos, por isso, foram usadas lípases e fosfolipases para a reação de hidrólise. A caracterização detalhada da interação das diferentes enzimas com a gordura foi obtida por simulações de dinâmica molecular (MD). Os resultados obtidos indicam uma interação mais efetiva das enzimas com a interface gordura/água a 60 ºC, o que foi relacionado com a tendência para o estado líquido da gordura, a temperaturas mais elevadas. Experimentalmente, a lipase foi obtida por uma solução comercial (Lipex), enquanto a fosfolipase do pâncreas suíno foi isolada em laboratório. No entanto, após determinação de atividade enzimática, concluiu-se que a enzima isolada era significativamente menos ativa em relação à formulação Lipex. A reação de hidrólise foi otimizada, tendo em conta algumas variáveis estudadas: proporção gordura/água, percentagem de Lipex, temperatura e variação de pH. Após a otimização da reação de hidrólise, foram produzidos quatro detergentes líquidos das mãos. Por fim, os detergentes obtidos foram caracterizados por medição de pH, teste de espuma, teste de emulsificação e viscosidade. Estes detergentes têm potencial para, após otimização, se tornarem numa alternativa para a valorização de resíduos provenientes do desperdício alimentar.
