dc.description.abstractWith this Project we propose to enrich the training of young people in the Professional Gastronomy Course, level V, based on the study of the food elements present in the ceramic work of the artist Rafael Bordalo Pinheiro. Its development is based on three pillars, the region's cultural heritage, professional training and gastronomy, which are articulated as fundamental elements in the valorization of training, providing young people with a vast set of knowledge that complements the technical skills acquired. The choice of this theme was based on our interest in developing an innovative and original Project within the scope of the Master's Degree in Food - Sources, Culture and Society, which will enrich the training of future cooks and managers, motivating them to explore the customs that characterize the region that surrounds them. In practice, the Project translates into the creation of recipes and the production of dishes, based on two ceramic pieces. In the first moment, called Bordalo Cooking in the year 2020, the trainees created and made an author's dish, applying their creativity, techniques and current Gastronomy trends. In another moment, they reproduced a recipe, based on cookery books of the time. These dishes were made and presented at a representative banquet of the 19th century called Bordalo Pinheiro - Gastronomic Ephemerides. In order to contextualize and support the work developed, the Project also contemplates the characteristic of the trainees and a brief analysis of the relationship between art and training. Still the description, of life and work, of the artist, contemplating his international projection, and a synthesis of the gastronomic conjuncture of the time. We also surveyed and analysis of the most relevant ceramic pieces, with different food representations. In conclusion, we have put together several annexes that encompass, the representative evidence of the whole process, including the factsheets and glossary, the documents developed and the catalogue of the works.eng
dc.description.abstractCom o Projeto que apresentamos propomo-nos enriquecer a formação dos jovens que se encontram no Curso de Gestão e Produção de Cozinha, do nível V, tendo como base o estudo dos elementos alimentares presentes na obra cerâmica do artista Rafael Bordalo Pinheiro. O seu desenvolvimento assenta em três pilares, o património cultural da região, a formação profissional e a Gastronomia, que, articulados, são elementos fundamentais na valorização da formação, facultando aos jovens um vasto conjunto de conhecimentos que complementam os saberes técnicos já adquiridos. A escolha deste tema, partiu do nosso interesse em desenvolver um Projeto inovador e original no âmbito do mestrado em Alimentação - Fontes, Cultura e Sociedade, que venha valorizar a formação dos futuros cozinheiros e gestores, motivando-os a explorar os costumes que caraterizam a região que os envolve. Na prática, o Projeto traduziu-se na elaboração e confeção de duas receitas, cada uma, inspirada numa peça cerâmica de Bordalo Pinheiro. Num primeiro momento, denominado Cozinha com Bordalo no ano 2020, os formandos criaram e confecionaram um prato de autor, aplicando a sua criatividade, as técnicas e as tendências da Gastronomia atual. Num outro momento, reproduziram uma receita, baseados em livros de cozinha da época. Estes pratos foram confecionados e apresentados num banquete representativo do século XIX denominado Bordalo Pinheiro – Efemérides Gastronómicas. De modo a contextualizar e fundamentar o trabalho desenvolvido, o Projeto também contempla a caraterização dos formandos e uma breve análise da relação entre arte e formação. Ainda a descrição, da vida e obra, do artista, contemplando a sua projeção internacional, e uma síntese da conjuntura gastronómica da época. Fizemos também, o levantamento e análise das peças cerâmicas mais relevantes, com diferentes representações alimentares. Para concluir, juntamos vários anexos que englobam, as evidências representativas de todo o processo, onde se inclui as fichas técnicas e o glossário, os documentos desenvolvidos e o catálogo das obras.por
