Apesar da alergia ser causada pela ingestão do alimento inteiro, hoje sabe-se que apenas o
alergénio é responsável pela sensibilização da reação e posterior libertação de IgE.
Atualmente, e muito devido ao desenvolvimento industrial e à globalização dos
mercados, os nossos hábitos alimentares foram e são constantemente alterados.
As indústrias alimentares utilizam novas tecnologias, como é o caso da utilização
abusiva de aditivos, que tem vindo a ser associados a um aumento da incidência da alergia
alimentar. Nesta monografia será dada particular relevância ao anato, tartrazina, carmim,
glutamato de monossódico e sulfitos.
No âmbito da alergia alimentar serão também abordados alguns alimentos que por
terem na sua constituição alergénios têm uma maior incidência na população portuguesa.
O diagnóstico da alergia, de extrema importância, poderá ser realizado através de
testes cutâneos e bioquímicos, sendo para isso, necessária a presença do médico especialista
para prevenir possíveis choques anafiláticos – injeção de epinefrina em caso de anafilaxia. A food allergy is an adverse reaction of the immune system to a food. Although the allergy is caused by the intake of the whole food, it is now known that only the allergen is responsible for the raising awareness of the reaction and subsequent release of IgE. Currently due to the industrial development and the globalization of markets, our eating habits were and are in constant change. Thus, in order to be market leaders, the food industry experiments with new techniques and add additives (annatto - natural dye, carmine – natural dye, tartrazine – artificial coloring, sulfites - preservative and antioxidant; monosodium glutamate (MSG) - flavor enhancer) to improve appearance and to increase the validity of the nutritional benefits of manufactured food. In addition to the additives, there are foods that, by its constitution to contain allergens, causing allergies: eggs, strawberries, milk, beef, and pork. The diagnosis of an allergy can be performed through the skin prick test and biochemical tests; therefore the presence of specialist is always required to prevent possible anaphylactic shock – epinephrine injection in case of anaphylaxis |
