Resumo: Neste trabalho, consideramos o pressuposto de que a cada momento histórico correspondem estilos alimentares em um determinado grupo social, e nos perguntamos sobre a temporalidade alimentar da macaxeira no Estado do Ceará, Brasil. Nosso objetivo é, portanto, propor uma reconstrução do consumo da macaxeira no Estado do Ceará, entendendo esse consumo como uma das peculiaridades alimentares de cada época, nesse Estado. Para atingir esse objetivo, optamos por analisar discursos escritos sobre o uso da macaxeira nas refeições dos cearenses. Utilizamos para análise uma seleção de textos injuntivos (receitas, cardápios, guias gastronômicos, programas de curso de formação de profissionais de cozinha ou gastronomia) e narrativo-descritivos (registros de saberes como relatos, crônicas e notícias), dispostos em quatro períodos de tempo (primeira metade do século XIX, primeira e segunda metades do século XX, e início do século XXI). Constatamos que o consumo da macaxeira no Ceará é completamente silenciado na segunda metade do século XIX, embora o silenciamento se dê, em alguns casos, como guia gastronômico e programa de curso e ficha técnica, por ausência de fontes. Na primeira metade do século XX, uma pequena alteração é percebida nas receitas em que se registram preparos à base de macaxeira. Outra pequena alteração é percebida na segunda metade do século XX, quando mais preparos à base de macaxeira são registrados em receitas e cardápios. Finalmente, no começo do século XXI, se registra a presença da macaxeira em todos os textos. Nos registros de saberes, ocorre apenas um registro no século XIX e outro no começo do século XXI. Contando que essas fontes aportam informações sobre a classe social mais alta, é possível pensar que o consumo da macaxeira esteve, em um longo período, associado a alimento de classes sociais baixas.
In this study, we considered the hypothesis that eating habits in a certain social group correspond to a specific historical moment, which makes us wonder about the food temporality of table cassava (“macaxeira”) in the State of Ceará, Brazil. Therefore, our goal is to propose a restructuring of the consumption of “macaxeira” in the State of Ceará, by being aware that this consumption is one of the food peculiarities of each historical moment, in that State. In order to achieve this goal, we chose to analyze written discourses about the use of “macaxeira” in the cuisine of Ceará. For this analysis, we made use of a selection of injunctive (recipes, menus, gastronomic guides, and Gastronomy vocational training course programs) and narrative and descriptive texts (books of registration of knowledge such as reports, chronicles, and news items), which were organized in four time periods (the first half of the nineteenth century, the first and second halves of the twentieth century, and the beginning of the twenty-first century). We found that the mention of the consumption of “macaxeira” in the recipes in Ceará was completely neglected in the second half of the nineteenth century, although this neglect can be attributed, in some cases, such as gastronomic guides and course programs, and technical records, to the lack of bibliographic sources. In the first half of the twentieth century, a small change is noticed in the recipes in which “macaxeira”-based preparations are registered. Another slight change can be noticed during the second half of the twentieth century, when more “macaxeira”-based preparations are registered in recipes and menus. Finally, in the beginning of the twenty-first century, the presence of “macaxeira” was registered in all texts. In the book of register of knowledge, there is only one register in the nineteenth century and another one in the beginning of the twenty-first century. Considering that these sources provide information about the upper class, it is possible to conclude that the consumption of “macaxeira” was, for a long period of time, associated with food of the lower class.
